If you’ve ever felt like you should be eating perfectly to see results after 40… but realistically, that just doesn’t stick — this is for you.
In this post, I’m walking you through what I actually eat in a week to stay consistent, feel energized, and support my fitness routine — without dieting, cutting carbs, or obsessing over every bite.
Because the truth is?
What works after 40 isn’t extreme… it’s repeatable.

I’m not following a strict diet.
I’m not cutting carbs.
And I’m definitely not eating perfectly.
But I am consistent — and that’s what’s made the biggest difference.
What I Eat in a Week to Stay Fit, Energized, and Consistent After 40
This isn’t a rigid meal plan — it’s a realistic rhythm of how I eat most days.
Breakfast (Simple, Filling, and Protein-Focused)
Most mornings, I keep it super simple:
- Oatmeal
- Protein powder
- Fruit (banana, strawberries, or frozen blueberries)
- Peanut butter
- Cinnamon
- Coconut Milk
It’s quick, it’s filling, and it gives me protein + fiber + healthy fats without overthinking it.
If I’m heading out early (like before teaching Zumba), I’ll have:
- Half a banana
- About ¼ of a LARABAR (apple pie flavor is my fav)
Just enough to give me energy without feeling heavy.

Lunch (Balanced + Fresh + Easy)
Lunch is usually something I can throw together quickly but still feels satisfying:
- Grilled tuna sandwich
- Chopped dill pickles mixed into the tuna
- Medium Cheddar Cheese slice
- Tomato slice from the garden
- Parmesan Cheese sprinkled on top right before closing the lid on my George Foreman grill
- Fresh vegetables or salad on the side (cucumbers or peas from the garden)
- A side of fruit (strawberries or raspberries from the garden)
I really try to include something fresh here — either a fruit or vegetable (usually both).

Snacks (Where I Keep It Real)
This is where I keep things flexible and realistic:
- Unsalted mixed nuts
- Crackers + hummus
- Chips + guacamole (or salsa if that’s what I have, I love a good homemade salsa)
- Crackers + peanut butter
- Apple + peanut butter + cinnamon
- Cheese slices or string cheese
- Fresh fruit (love little Cuties)
- Veggies with homemade ranch
I don’t overcomplicate snacks — I just try to pair carbs with something filling like fat or protein so I stay satisfied.

Dinner (Simple, Family-Friendly, and Repeatable)
Dinner is where I keep things the most realistic:
- Spaghetti with sauce (spicy sausage mixed in)
- Crockpot meals (like taco soup or sausage cheese ravioli)
- Chicken bowls with chicken, salmon, quinoa, brown rice, veggies, and sauce
- Shredded chicken with avocado and mac and cheese
- Salmon or tilapia with a rice dish
I’m a big fan of meals that:
✔ Don’t take forever to make
✔ Can be reused as leftovers

My Secret Weapon: Rotisserie Chicken
One of the easiest things I do:
Grab a rotisserie chicken from Costco (the $5 price just can’t be beat).
- Use some right away
- Freeze the rest
- Eat it alone, add it to bowls, soups, crockpot meals, salads and more
It saves time, money and makes it way easier to get protein in.
The “Extras” That Actually Make This Work
This is the part most people skip — but it matters just as much as the food itself.
I Mostly Drink Water
I keep it simple.
Water is my go-to.
I carry around my pink water bottle pretty much where ever I go (and if I’m traveling, it goes in in the water bottle carrier).
I occasionally drink a lemonade (let’s be real, if we are at Chick Fil A, we are getting a lemonade). Or orange juice, especially if it’s fresh squeezed orange juice.
If I drink soda, it’s a Fresca or Sprite mixed with lemonade, but that’s rare. I don’t care for carbonation.
I never drink coffee, tea or alcohol. Drinking addictive substances isn’t for me – I don’t believe it’s healthy for the body (or the budget for that matter).
I Don’t Cut Out Foods I Love
I love:
- Sugar cookies
- Shakes (Peanut butter or blueberry to be precise)
I still eat/drink them — just in moderation.
I Use the 80/20 Rule
If I’m eating well 80% of the time, I don’t stress about the other 20%.
That’s what keeps this sustainable.
I Control Portions Without Obsessing
Some simple things I do:
- Cut my sandwich in half before I start eating
- Use smaller plates and bowls
- Eat slower so I can actually feel when I’m full
- Don’t bring the entire container of Peanut Butter M&M’s to the couch to watch a movie
I Make Healthy Foods Easy to Grab
- Keep fruit on the counter
- Put veggies at the front of the fridge
- Use salad containers to create a “salad bar” at home
If it’s easy to grab, it gets eaten.

I Don’t Keep a Ton of Temptation in the House
Because let’s be honest…
If it’s there, it’s getting eaten. 😅
(Yes, I do currently have a giant container of peanut butter M&Ms… like I said, I’m not perfect…)
I Focus on Protein (Without Overthinking It)
I don’t track everything — but I do try to:
- Add protein to meals
- Make sure I’m not just eating carbs (like my snack peanut butter with crackers, instead of just crackers)
What I Order When I Eat Out
I keep it simple here too:
- Usually choose chicken over beef
- Swap fries for fruit or a side salad
- Eat half, save half
No guilt. Just balance.
Late Night or Extra Hunger (Real Life Moments)
If I’ve had a long, active day (like dancing, hiking, working out), I’ll have something simple:
- Crackers + peanut butter
Nothing fancy — just enough to satisfy hunger without going overboard.

The Bottom Line
I don’t follow a diet.
I follow a lifestyle I can actually stick to.
- Simple meals
- Real food
- Balance
- Consistency
And that’s what’s helped me stay on track without burning out.
